Marriott Hotels, Dubai, UAE, is looking for a Food Safety Suuport Coordinator. You will play a vital role in supporting the hotel’s food safety and hygiene operations, aligning with Marriott Global Food Safety standards and Dubai Municipality regulations. This is an entry-level role suitable for a fresher with an educational background in Food Technology, Environmental Health, or a related field. You’ll be able to help implement food safety protocols, conduct inspections, prepare communication materials, and ensure continuous compliance across all food-related departments.
Job Responsibilities
1. Training & Communication Support
- Assist the Director and Manager of Food Safety in developing and preparing training materials, monthly newsletters, posters, and food safety information boards.

2. Daily Operational Monitoring
- Participate in daily walkthroughs of food handling and storage areas using the Marriott Global Food Safety 43-point checklist.
- Identify and report non-compliances through the appropriate channels, ensuring timely corrective actions.
- Verify that brand standards and Dubai Food Code regulations are implemented and maintained across all operations.
3. Inspections & Hygiene Oversight
- Conduct daily checks on the cleanliness and sanitation of kitchen, storage, bar, and food service areas.
- Communicate cleanliness issues directly with the Stewarding team to ensure immediate action.
- Monitor staff behavior and hygiene practices, particularly those that may pose food safety risks.
- Ensure that ill food handlers (especially kitchen and service staff) are not involved in food preparation or service activities.
4. Risk Assessment & Compliance
- Inspect processes related to purchasing, receiving, storing, and preparing food to identify and mitigate food safety hazards.
- Monitor temperature logs, cold chain processes, and ensure compliance with product rotation (FIFO), labeling, and storage protocols.
- Support in checking and recording temperature of appliances, food, and storage areas using monitoring devices; report abnormalities to the facility team.
5. Recordkeeping & Data Collection – marriott
- Assist with monthly food sampling and documentation.
- Help maintain accurate records of internal audits, guest complaints, supplier complaints, and food safety observations.
- Support trial runs and other internal tests to assess food safety readiness.
6. PIC Compliance & Administrative Tasks
- Follow and assist in implementing the PIC (Person-in-Charge) guidelines mandated by Dubai Municipality.
- Support administrative tasks including report compilation, checklist updates, and meeting minutes as required.

7. Communication & Reporting
- Provide regular feedback to the Food Safety Manager and Director FS & ES on day-to-day hygiene concerns and longer-term food safety goals.
- Immediately escalate any food safety concerns or guest complaints to the appropriate leadership.
8. Personal Hygiene & Food Handling Practices
- Adhere to Marriott’s personal hygiene standards including hand hygiene, wearing a hairnet/hat, clean uniform, and appropriate footwear.
- Model and ensure compliance with safe food handling practices to safeguard guest health.
Qualifications
- Bachelor’s degree in Food Technology, Microbiology, Environmental Health, or a related discipline.
- Fresh graduates are welcome to apply.
- Basic understanding of HACCP, Dubai Food Code, and food hygiene principles is an advantage.
- Good communication and observation skills.
- Ability to work collaboratively with kitchen, stewarding, and food & beverage teams.
- Eagerness to learn and grow within the food safety and hospitality field.
