Baking Products manufacturing Industry, MNC is hiring a Junior R&D Specialist to join their innovation team in Sharjah. The successful candidate will support the research, development, and quality improvement of bakery ingredients and finished baked goods. You will be involved in hands-on product trials, prototype testing, and benchmarking studies for Baking products such as pastel de nata’s, bakery goods, bread improvers, cake mixes, and bakery pre-mixes. This role also includes supporting internal audit processes to ensure compliance and alignment with quality and food safety standards.
Job Responsibilities
Product Development & Laboratory Testing
- Assist in the development of new and improved baking products by preparing samples, solutions, and trial formulations.
- Conduct laboratory tests on bread improvers, cake mixes, and other bakery-related items to evaluate product performance, texture, and shelf life.
- Operate and maintain standard lab equipment to carry out ingredient functionality and dough/batter testing.
- Accurately document experimental designs, results, and formulations in laboratory notebooks ensuring full traceability and reproducibility.
Prototype Manufacturing & Process Improvement
- Support ongoing research and process development projects focused on bakery applications, including small-scale prototype manufacturing.
- Assist in RAP (Research and Application Process) studies to optimize formulations and improve process efficiency for baking products.
- Analyze test outcomes and prepare reports outlining next steps for project advancement or closure.
Market & Competitor Analysis
- Perform regular benchmarking and sensory evaluations of competitor baking products—particularly bread improvers, cake mixes, and related items.
- Track and report on local market trends and consumer preferences in coordination with the marketing team.
- Provide insights and recommendations for product improvements based on market feedback and competitor analysis.
Compliance & Quality Assurance
- Ensure that all development activities comply with internal quality standards, GMP (Good Manufacturing Practices), and applicable food regulations such as FDA and ISO.
- Follow all laboratory safety protocols and food safety guidelines.
- Maintain confidentiality of proprietary formulations and internal processes.

Cross-Functional Collaboration
- Support internal audits by assisting in the evaluation of quality documentation and production records.
- Liaise with production and quality teams to ensure new baking products are scalable and manufacturable within current operations.
- Collaborate with the sales and marketing teams to align product development with customer needs and regional market demand.
Sales & Customer Insight Support
- Help the commercial team by providing technical insights and supporting collection reconciliation and customer satisfaction follow-ups.
- Contribute to achieving sales and gross margin targets by assisting in the development of customer-focused bakery solutions.
Job Qualification
- Bachelor’s degree in Food Science, Food Technology, or a related field with a specialisation or interest in baking science or bakery product development.
- 1–3 years of experience in R&D or Quality Control, ideally within a Bakery Product manufacturing or food ingredient company.
- Basic understanding of functional bakery ingredients and their application in dough and batter systems.
- Strong analytical skills with the ability to interpret lab data and translate results into actionable product improvements.
- Excellent communication skills and fluency in English.
- Commercially aware and capable of identifying opportunities for innovation in baking product categories.
- Detail-oriented, well-organized, and capable of working on multiple projects simultaneously.
