Quality Controller – Chocolate Industry Dubai title – Seeking a highly skilled and detail-oriented Quality Controller to oversee and maintain product quality standards at every stage of our chocolate manufacturing process.



This role is pivotal in ensuring that all raw materials, in-process batches, and final packaged chocolates meet Zocoa’s quality specifications and adhere to international food safety regulations. The ideal candidate will possess extensive experience in quality control within the chocolate or dry food manufacturing sector and demonstrate a hands-on approach to quality assurance.

Job Responsibilities

  • Quality Planning & Implementation:
    • Develop, implement, and continuously improve quality control plans in alignment with ISO 22000, HACCP, GMP, and other international food safety standards.
    • Define quality benchmarks and inspection criteria for raw materials, semi-finished products, and finished chocolates.
  • Inspection & Testing:
    • Monitor and inspect raw material deliveries to ensure conformance with procurement specifications.
    • Supervise in-process checks during chocolate production and packaging to ensure consistency and compliance.
    • Perform routine sampling and testing using laboratory instruments to assess product quality attributes (e.g., texture, taste, color, fat content, microbial safety).
  • Non-Conformance & Root Cause Analysis:
    • Investigate quality deviations and product defects through structured root cause analysis.
    • Implement corrective and preventive actions (CAPA) and monitor their effectiveness.
    • Collaborate with cross-functional teams to resolve quality-related issues and reduce rework or wastage.
  • Quality Documentation & Compliance:
    • Maintain accurate and updated records of inspections, test results, deviations, corrective actions, and internal audit findings.
    • Prepare quality reports and metrics for internal review and regulatory compliance.
    • Ensure all documentation complies with UAE Municipality and other relevant local food safety authorities.
  • Internal & External Audits:
    • Lead internal audits of production and quality systems to ensure ongoing compliance with food safety protocols.
    • Support external audits conducted by third-party certification bodies and government regulators.
  • Team Leadership & Training:
    • Supervise QC inspectors and technicians, ensuring adherence to SOPs and safety protocols.
    • Conduct training sessions for production staff on GMP, personal hygiene, quality procedures, and HACCP principles.
    • Promote a company-wide culture of quality and food safety awareness.
  • Process Improvement:
    • Analyze product quality trends and propose improvements in processes, formulations, or packaging to enhance product shelf-life, uniformity, and consumer satisfaction.

Job Qualifications

  • Bachelor’s Degree in Food Technology, Food Science, Industrial Engineering, or a related discipline.
  • Minimum 5 years of Quality Control experience in the UAE, preferably within chocolate production, confectionery, or dry food FMCG.
  • Strong technical knowledge of quality systems such as ISO 22000, HACCP, GMP, and food labeling regulations.
  • Proficiency in Root Cause Analysis (RCA), Statistical Process Control (SPC), and Quality Management Tools.
  • Excellent communication, leadership, and organizational skills.
  • Ability to manage priorities under pressure and work collaboratively with cross-departmental teams.
  • Familiarity with laboratory equipment, sensory testing, and microbiological analysis is an advantage.
